Blueberry American style Pancakes
Who else loves to treat themselves to some pancakes on the weekend? Our American style Blueberry pancakes are the perfect brunch-at-home weekend recipe, we like to top ours with extra blueberry compote and a dollop of natural yogurt.

Ingredients
Pancakes
120g green Isle blueberries
135g plain flour
1tsp baking powder
1/2 tsp cinnamon [optional]
2 tbsp caster sugar
130 ml milk[almond milk etc can be substituted]
1 large egg lightly beaten
2 tbsp melted butter
Compote:
1 pack of Green Isle Blueberries 300g
40g Sugar
Zest and juice of 1 orange [optional]
Method:
- To make the compote, in a sauce pan on medium heat add the Blueberries and cook for 1 minute
- Add the sugar and the zest and juice (if using) and stir until all the sugar is dissolved. Bring the mixture to the boil for 1 minute, remove from the heat and leave to cool down.
- To make the pancakes, sift dry ingredients into a food processor in a jug combine the milk egg and melted butter, mix until smooth and creamy.
- It is at the cooking stage that the blueberries are best added.
- Add a small ladle full of batter to your heated pan as it start to cook and just before flipping add a spoon full of Green isle Blueberries, flip and allow to finish cooking on the opposite side. The delicious blueberries will cook when flipped.
- Serve pancakes with blueberry compote and Greek style yogurt.
