Harissa Chicken
with Cauliflower Rice + Chick peas,
Pomegranate, Butternut Squash & Red Onion

Ingredients

1 bag (320g) Green Isle Cauliflower Rice + Chick peas, Pomegranate, Butternut Squash & Red Onion

2 chicken breasts

2 teaspoons of harissa paste or seasoning

Vegetable oil

Method

Preheat your oven to 200⁰C/gas 6.

Place the chicken breasts in a shallow bowl, cover with the seasoning or paste and allow to sit for 10 minutes.

Heat a little oil in an oven proof pan and fry the chicken on one side for 2-3 minutes. 

Turn the chicken over and cover the pan with foil and bake for 15-20 minutes until the chicken is cooked through (or transfer to a roasting tin before covering with foil).

Allow the chicken to rest for a few minutes

Serve Harrisa Chicken on a bed of Caulilfower Rice + Chick peas, Pomegranate, Butternut Squash & Red Onion
