Overnight oats with blueberry compote and chia seeds

Ingredients

Overnight Oats

45g oats
120mls liquid (milk fruit juice etc.)
70g Green Isle Blueberries
1 tsp chia seeds
1 tsp nuts optional


Compote:
1 pack of Green Isle
Blueberries 300g
40g Sugar
Zest and juice of 1 orange [optional]

Method

Overnight Oats
Combine all the ingredients together bar the compote the night before.

Compote:
In a sauce pan, on a medium heat, add the blueberries and cook for 1 minute. Add the sugar, zest and juice of orange if using and stir until all the sugar is dissolved. Bring mixture to the boil for 1 minute, remove from the heat and leave to cool down. Serve on top of your overnight oats with some of your favourite yogurt.
