Raspberry and Vanilla fool

1 pack of Green Isle Raspberries
60g sugar 250mls whipping cream
100mls Greek style yogurt
1 tsp vanilla extract
Fresh mint to garnish - optional
Place the raspberries, sugar and vanilla in a sauce pan and heat for 3-5 minutes until the sugar is dissolved and it starts to thicken.
With an electric mixer, whisk the yoghurt and cream together until stiff.
When the raspberry mixture has cooled, combine with the yoghurt cream mixture, holding back a small amount of the fruit mixture to spoon over the top.
Serve in tall glasses with extra fruit mixture spooned on top and fresh mint to garnish.
