No bake Mixed Berries and Custard tart

1 store bought 8inch pastry case
300ml Custard
225g Green Isle Mixed Berries thawed and drained, keep juice for coulis
3 tbsp. apricot jam heated
1-2 tbsp. sugar
250ml of whipping cream – optional


Simply spoon the custard over the pastry base on an even layer. Place the thawed mixed berries evenly across the custard. Spoon the lightly heated apricot jam over the berries and leave to set in the fridge before serving.

To make the coulis, add a small amount of sugar 1 to 2 tsp depending on the amount of juice and heat in a pan until the sugar dissolves and the mixture slightly thickens, leave to cool and serve with your tart, whipped cream is optional.
