Vegetable and Lentil Soup 

Serves 4-6

Prep Time 10-15 minutes

Cook Time 18-20 minutes


1 tablespoon of oil

1 onion, chopped

2 cloves garlic, finely chopped

1 x Bag Green Isle Mixed Vegetables 450g

200g red lentils

1 teaspoon of ground cumin

1.25 litre vegetable stock



  1. Heat the oil in a large saucepan and sauté the onion and garlic until soft.
  2. Toss in the Mixed Veg and cumin and cook for 2-3 minutes.
  3. Add in the lentils and stock and season well.
  4. Bring to the boil, reduce the heat and simmer for 10-15 minutes until the vegetables are soft and the lentils have broken down.
  5. Serve with crusty bread.
